Minangkabau Spicy Batokok Jerky Recipe

In addition to Rendang, the food that is the top of the taste in Padang restaurants is Dendeng. Almost all Padang restaurants provide jerky as a side dish, even they make jerky as a restaurant-specific food to bring customers.

Jerky is a food made from processed meat that is cut into thin pieces into sheets. Batokok jerky here means in thinning the meat is beaten ( ditokok in Minang language) using kneading.

This dish has a taste that is not inferior to other padang dishes. Although batokok jerky has a spicy taste, it is still delicious on the tongue.

Basically, meat processing in making balado jerky (red chili) and green lado jerky (green chili) is the same. The difference only lies in the ingredients used, for example in balado jerky it uses red chili while in green lado jerky it uses green chili. But about the taste, it is definitely much different in deliciousness.

Well, for those of you who are curious about what kind of recipe to make a delicious and delicious Padang batokok jerky dish. Here we explain the recipe below.

Main Ingredients for Making Batokok Jerky:

1 kg meat has in
Water to boil
3 cloves garlic, crushed
3 deaf pieces
1 tsp white pepper powder
Salt

Batokok Jerky Marinade Ingredients:

3 shallots
Salt and sugar
1 tsp coriander
1 tbsp tamarind
water 3 cloves garlic
Water
to taste 1 tsp ground
white pepper Oil for frying

Ingredients and Seasoning of Red Lado Chili / Ijo :

10 chillies, coarsely
cut Salt and sugar
1 tomato
1 tbsp tamarind
water 8 shallots
Coconut oil

How to Process Meat Before Seasoning and Cooking:

The first thing that can be done first is to clean the meat that has been purchased and prepared by washing it using clean running water. Make sure that when you wash meat, dirt and germs on the meat can be cleaned thoroughly.

After washing, put the meat in a basin or large bowl and drain the washing water. Make sure that there is no stagnant water in the basin that will keep the meat wet with water.

After that, set aside temporarily before we prepare the pot and water.

Put water in the prepared pot, put the meat in it and boil the meat by adding spices and boil until the meat becomes evenly tender.

After boiling, remove the meat from the stew and separate it with the stew soup, put the meat in the previous basin.

Prepare placemats and slices of meat in a direction against the meat fibers and cut the meat into thin shapes so that when the meat is fried or cooked the texture becomes more tender and easily cooked evenly.

How to Cook Batokok Jerky:

First, please grind or finely mash the marinade, add salt and water and sugar to taste. Then stir the mixture until the spices dissolve evenly.

Marinate the sliced pieces of meat with this marinade and let it sit for about 1 hour to ensure that the marinade is absorbed in the meat as a whole.

After an hour, prepare enough oil on the pan, wait until the oil is hot and fry the soaked meat jerky to dry and turn black but not charred.

Once cooked, remove and drain so that the oil drips down before serving.

After frying we will make sambal lado ijo or red. The trick, steam chilies together with tomatoes and onions until they become soft for approximately 10 minutes.

Grind or coarsely mash the ingredients then add spices such as salt, sugar and acidic water evenly. Sauté for a while until you smell good and remove from heat.

When the stir-fry is cooked, take the fried jerky and serve it together with the sambal lado ijo or red lado that has been made.
